Who is Edna Jane?
Edna Jane was my mom’s mom (my maternal grandmother). A simple woman from Western North Carolina who had to stop grade school to help take care of her brothers and sisters so her mother could work. She learned a lot quickly and was one of the wisest women I’ve ever known. She was my inspiration and still is. She loved to cook and to bake. One of my favorite memories is Gigi’s (that’s what we called her) biscuits. She would make everything. She had me peeling bushels of green beans and potatoes. I loved every minute of helping her. Just to see what she was making and be in the kitchen with her. Gigi also loved her BBQ. I remember one of her favorite treats was a pulled pork sandwich with slaw and hushpuppies from Little Pigs BBQ in Asheville NC, and she’d get that sauce and slaw all over her! And we would just laugh. I also named my daughter after her. All this to say, i think great Carolina BBQ made with love is a great testament to her name.
